Vegan Christmas dinner recipes

This year, for many people a ‘green Christmas’ is at the top of the menu. For some, that might be in the form of plant-based or vegan eating, and now is the time to start looking for recipe inspiration.

Showcasing the best of seasonal veg, a good Christmas dinner is a total delight and there is now a wealth of vegan Christmas dinner recipes to try.

Inspired by the contents of the iconic veg boxes, Riverford chef Bob Andrew has created a special collection of easy vegan Christmas dinner dishes that will become favourites on your festive table.

A bit more special than your everyday roast dinner, this mushroom, lentil and red wine wellington is simple and speedy and best of all, most of the recipe can be prepped the day before.

A twist on traditional roasties, smashed potatoes with onion and sage are reminiscent of a classic Christmas stuffing. Squashing the spuds creates lots of edges and surface area that will crisp up deliciously in the roasting tray.

Add the veg side dishes you love the most – simple steamed seasonal veg or something new like braised sprouts, raw kale and almonds or baked swede with slow-cooked onions.

To finish, this decadent vegan Christmas pudding and pear mess takes dessert to the next level: an oozy chocolate sauce with meringue and fragrant poached pears.

Each vegetable layer is prepared differently and then the stacked and rolled inside vegan filo pastry to create a 'roulade. Its a recipe I first created in Washington D.C & then again for my Sunday Mercury newspaper column.
