Best pumpkin recipes for Halloween

Make your own Halloween-themed seasonal feast with these recipes for pumpkin fritters, spiced curry or warming salads, or try madeleines with pumpkin custard and cinnamon meringue.

Every year, the UK wastes around 18,000 tonnes of perfectly edible pumpkin flesh and seeds as the nation carves away to make spooky Halloween lanterns.

Like squash, pumpkin is sweet and warming and can be delicious if cooked in the right recipes. Here are a few veg-centric recipes to help turn your pumpkin waste into a tasty meal or treat.

For all of the below you can substitute pumpkin for squash, which will also be infinitely tastier than the watery Halloween pumpkins. Squash can also be decorated and then cooked and eaten afterwards.

These fritters are simple to prepare and the romesco is a delicious accompaniment, or it can be substituted for a simple mayonnaise mixed with paprika and garlic. We like the romesco with a mix of nuts rather than using just almonds. See recipe.

Squash and pumpkin work well in a Thai curry as the coconut milk complements the sweetness of the veg, while lemony flavours add a fresh flavour.     2. Nope! Every single way in (ie., the hand grab symbol) takes me back to the original page-‘Best pumpkin recipes for Halloween’ which does not give the grab symbol so it doesn’t open! ??

  2. Fantastic ideas. Thanks, Riverford! I recently made vegan pumpkin spice cake with apricot icing (using coconut cream) topped with toasted nuts. If you use stevia or xylitol to sweeten, it’s healthy enough to eat all day 😉

    I find the smaller pumpkins are the most flavourful for cooking, however butternut squash is a decent substitute.
